• 3 Tbsp Chia seeds
• 1 Tbsp maple syrup or honey
• 1/4 Tsp vanilla extract
• Fresh berries, nuts, or coconut flakes for topping
1. In a mixing bowl or jar, whisk together the almond milk, mushroom matcha, maple syrup, and vanilla extract until well combined.
2. Stir in the chia seeds, ensuring they’re evenly distributed throughout the liquid.
3. Cover the mixture and place it in the refrigerator for at least 2 hours or overnight. The chia seeds will absorb the liquid and form a pudding-like consistency.
4. Before serving, give the chia pudding a good stir. Add a splash of milk if it’s too thick. Top with fresh berries, nuts, or coconut flakes as desired.
